Zucchini

Zucchini is a versatile vegetable. It can be sautéed with salt and pepper, added to a stir fry, deep fried, made into noodles, or, as in the recipe below, made into bread, although it is really very similar to a cake (but we won’t tell if you have it for breakfast).

Zucchini Bread

  • 2 cups sugar

  • 1 cup oil

  • 3 eggs

  • 3 cups flour

  • 1 tsp. baking soda

  • 1 tsp. baking powder

  • 2 tsp. cinnamon

  • 2 tsp. vanilla

  • 2.5 cups shredded Zucchini

Mix together the sugar, oil, and eggs. Add the remaining dry ingredients and stir until just mixed. Fold in the zucchini and vanilla. Pour into 2 greased loaf pans and bake at 350 for one hour.
